We had these delicious, healthy fish tacos for dinner last night and LOVED them! The ‘great fruit‘, avocado, Greek yogurt–what’s not to love!? We used tilapia for these tacos but any white fish would suffice. Honestly, we chose tilapia because it’s CHEAP! That’s how we make decisions around here ;).
Especially since this cutie joined the clan 🙂
We also went for lime-flavored fish after my mom left this huge bag of limes in our fridge.
My parents have a lime tree so we are NOT short on limes! Margaritas, anyone!?
And, here are [some of the other] Ingredients for about 6 tacos:
(plus…Greek yogurt, olive oil and garlic–I always end up adding things after the ‘ingredients’ pic!)
–1/2 red onion, chopped
–1/2 red bell pepper, chopped
–3 cloves garlic, minced
–1 small avocado, peeled and chopped
–1 small grapefruit, peeled and cut into small pieces
–1 roma tomato, chopped
–salt and pepper to taste
–3 Tbsp chopped cilantro
–juice from 4 small limes (2 for pico and 2 for fish)
–4 fillets of tilapia
–6 Tbsp Greek yogurt
–4 Tbsp olive oil
–6 whole wheat tortillas
Directions: Preheat oven to 425 degrees F. Then, combine onion, bell pepper, garlic, avocado, grapefruit, tomato and cilantro in a small mixing bowl. Squeeze juice from two limes directly onto mixture. Then add salt and pepper, stir and set aside while fish cooks. For the fish, lay the fillets in a baking dish and pour one tablespoon of olive oil on each fillet. Squeeze juice from 2 more limes directly on the fish. Sprinkle with salt and pepper and bake for about 12 minutes or until fish flakes with a fork. Serve fish on tortillas, topped with pico and one Tbsp Greek Yogurt and enjoy!
